Title: Cornstarch White Sauce
Categories: Sauce Blank
Yield: 2 Half-cups

CREAM CORNSTARCH BOX
1 1/2tbButter
1tbCornstarch
1/2tsSea salt
1/8tsPepper, black
1cMilk

Melt butter in saucepan. Blend in cornstarch, salt, and pepper. Gradually add milk. Heat to boiling over direct heat and then boil gently 2 minutes, stirring constantly.

Sylvia's comments: much to my surprise, this performed exactly as advertised! I didn't expect it to work because the cornstarch clumped in the butter; I expected to re-make it using the usual stir-water-into-cornstarch technique. The second time, I didn't think it would thicken at all because I left it unstirred for long enough for some cornstarch to "cook" clumped together. Neither attempt was lumpless, but I don't care; they were both quite usable and this is MUCH easier and quicker than the flour technique.
